Pumpkin Seeds

Boo!

Remove seeds from pumpkin and separate from pumpkin guts….
Rinse seeds well in cold water….
Sprinkle seasoned salt to taste….
Heat frying pan to medium heat…
Add seeds to pan (no oil or butter required)…
Stir seeds constantly to prevent from burning…
Heat until seeds are a nice golden brown and start to open…

(Warning! Seeds could spontaneously pop open with the intensity of a pop corn kernel popping…. Be prepared! I screamed!)

Season with additional seasoning salt if desired…

Maple Walnut Fudge

Maple Walnut Fudge

MAPLE WALNUT FUDGE

2 tablespoons butter
2/3 cups CARNATION Evaporated Milk
1 1/2 cups granulated sugar
1/4 teaspoon salt
2 cups miniature marshmallows
1 (12 ounce) package White chocolate chips nestle is best
1/2 cup chopped walnuts
1 1/2 teaspoons maple flavored extract
50 walnut halves or pieces

Directions

LINE 13 x 9-inch baking pan with foil.
COMBINE butter, evaporated milk, sugar and salt in medium, heavy-duty saucepan.
Bring to a full rolling boil, stirring constantly, over medium heat.
Boil, stirring constantly, for 4 1/2 to 5 minutes. Remove from heat.
STIR in marshmallows, morsels, nuts and maple flavoring.
Stir vigorously for 1 minute or until marshmallows are melted.
Pour into prepared baking pan. On top of fudge, place nut halves in rows spacing about 1/2 inch apart.
Press into fudge; refrigerate until firm.
Cut into squares with 1 nut half per square. or mix nuts in fudge

German Chocolate Fudge

German Chocolate Fudge

2 cups semisweet chocolate chips
12 (1 ounce) squares German sweet chocolate
1 (7 ounce) jar marshmallow creme
4 1/2 cups white sugar
2 tablespoons butter
1 (12 fluid ounce) can evaporated milk
1/8 teaspoon salt
2 cups chopped pecans
Directions

Combine chocolate chips, German sweet chocolate and marshmallow creme in large bowl.
Combine sugar, butter, evaporated milk and salt in heavy skillet.
Bring to a boil over medium heat.
Cook for 6 minutes, stirring constantly.
Pour hot syrup over chocolate mixture.
Stir with wooden spoon until smooth. Stir in pecans.
Spread into buttered 10×15 inch pan.
Let stand until firm; cut into squares.

Melted Snowman Sugar Cookies

Melted Snowman Sugar Cookies

Fun to do with the children!
Of course this is not the healthiest, but have fun and moderation.

Ingredients:
*For the Cookie, you’ll need:
2/3 C. Shortening
2/3 C. Butter, softened
1 1/2 C. White Sugar
2 Eggs
1 Tsp. Bourbon Vanilla Extract
Seeds from 1 Vanilla Bean
3 1/2 C. All-Purpose Flour
2 Tsp. Baking Powder
1/4 Tsp. Salt

*For the Buttercream Frosting, you’ll need:
1 stick of Butter, slightly softened
1 Tsp. Vanilla Extract
1 pound Powdered Sugar
5 Tbsp. milk

*For the Decorations, you’ll need:
Bag of large Marshmallows
Decorating Icing (Black, Red, Yellow, Blue, Green)

Directions:
*For the Cookie:
1. Preheat oven to 350F.
2. In a large bowl, mix together shortening, butter, and sugar. Once mixed, stir in eggs, vanilla extract, and vanilla bean seeds. Then stir in flour, baking powder, and salt. Mix together until dough is mixed together.
6. Roll dough into large balls. Slightly flatten then place onto cookie sheet, about 2 inches apart from each other.
7. Bake 12-14 minutes. Time will depend on the size of your cookies. You will bake until bottom is light brown.
8. Remove from baking sheet and allow to cool before applying frosting.

*For the Frosting:
1. In a large bowl, with a fork, mix together softened butter, vanilla extract, and powdered sugar. Gradually mix in milk with an electric mixer until smooth and stiff.
2. Spread on top of COOLED cookie. Let frosting set before applying decorations… 30 minutes or so.

*For the Decorations:
1. On a microwavable plate, spray a thin amount of cooking spray. Place 1 marshmallow per cookie onto the plate. Do not let them touch. Microwave marshmallows for a few seconds, to create a ‘melting’ look. Be sure to watch the marshmallows! Stop the microwave as soon as you see them start to get puffy. This should be anywhere between 7-15 seconds.
2. Carefully place the marshmallows on top of the frosted cookie and press down slightly.
