Skillet Potatoes or Hash

Skillet Potatoes or HashSkillet Potatoes

2 large russet potatoes, cut into 1″ cubes………
14 oz. smoked sausage, thinly sliced
1 small onion, chopped
1/2 c. chopped bell pepper (red or green)
1 clove garlic, minced
1/4 c. chicken stock
1 1/2 tsp. paprika
1/4 tsp. each salt and pepper
1/4 tsp. dried parsley
2 tbsps. veg. oil

In a large skillet heat oil…add in the smoked sausage and cook,
turning often till browned on edges.
Remove meat from skillet and add in the potatoes
cook over med. high heat till they begin to brown and become tender.

Add in the onions, pepper and garlic cooking for about 5 minutes
then add in the chicken stock and cover.
Cook for about 5-6 minutes,
stirring occasionally. Remove cover and check potatoes for doneness.
Add the spices, stir and add in the smoked sausage.

INGREDIENTS
YIELD
2 loaf cakes

3 eggs
1 cup oil
2 cups sugar
3 teaspoons vanilla
2 1/4 cups coarsely shredded unpeeled zucchini
1 (14 ounce) canwell drained crushed pineapple
3 cups flour
2 teaspoons baking soda
1 teaspoon salt
1/2 teaspoon baking powder
2 teaspoons cinnamon
3/4 teaspoon nutmeg
1 cup chopped nuts
1 cup raisins or 1 cup currants

DIRECTIONS

Set oven to 350 degrees (second lowest rack).
Grease two 9 x 5-inch loaf pans, or mini loaf pans.
In a large bowl, beat eggs, oil, sugar and vanilla, continue beating until thick and foamy with a spoon,
then stir in shredded zucchini and pineapple.
Combine remaining dry ingredients together, then gently stir into zucchini/pineapple mixture just until blended.
Add the chopped nut and raisins; stir to combine.
Divide the batter evenly between two greased and floured 9×5 loaf pans.
Bake for 1 hour or until cake tests done.
Cool in pans for 10 minutes before removing.
Muffin Variation: follow above recipe except nearly fill paper-lined muffin cups.
Bake at 350 degrees for 24-30 minutes.

Apple Fritter Cake

Apple Fritter CakeApple Fritter Cake! Love this recipe, it’s so easy!

For the batter:

3 cups of flour
1/4 tsp. salt
1 cup of sugar
4 tsp. baking powder
1 1/2 cup milk
2 eggs
2 tsp. vanilla
1/2 cup butter, melted
6 small apples cored, peeled and diced

For the topping:

1 cup of butter, softened
1 cup of brown sugar
2 tbsp. flour
1 tbsp. cinnamon

For the glaze:

2 cups of powdered sugar
5 tbsp. milk
1 tsp. vanilla

Start by mixing all the ingredients for the batter (except the butter) together in a bowl.
Once combined, carefully pour in the melted butter.
If you do this part with your mixer at a high speed it will splash everywhere.
So slow is best.
Pour the batter into a greased 9×13 pan, any smaller and it will overflow while baking.
Evenly distribute the apples over the top of the batter.

Ingredients

1 3/4 cups flour
3/4 teaspoon baking soda
1/4 teaspoon salt
1 and 1/2 teaspoon cinnamon
1/2 cup white sugar
1/2 cup dark brown sugar
2 eggs
1/3 cup vegetable oil
1/3 cup unsweetened applesauce
3 tablespoons milk
1 teaspoon vanilla extract
2 large bananas (mashed)
1 large apple (peeled, cored, chopped)

Instructions

Mix together flour, baking soda, salt, cinnamon and sugars.
Blend in eggs, oil, applesauce, milk, and vanilla.
Stir in banana and apple.
Pour batter into greased loaf pan.
Bake at 350 degrees for about 1 hour or until toothpick test comes out clean.

Serves 8
1/3 cup brown sugar
1 teaspoon ground cinnamon
2/3 cup white sugar
1/2 cup butter, softened
2 eggs
1 1/2 teaspoons vanilla extract
1 1/2 cups all-purpose flour
1 3/4 teaspoons baking powder
1/2 cup milk
2 apples, peeled and chopped (any kind),
mixed with 2 tablespoons granulated sugar and 1 teaspoon cinnamon
{I grated the apples instead of chopping them just because it was quicker}
Old-Fashioned Creme Glaze
1/2 cup of powdered sugar
1-3 tablespoons of milk or cream- (depending on thickness of glaze wanted)

Instructions

Preheat oven to 350 degrees.
Use a 9×5-inch loaf pan and spray with non-stick spray or
line with foil and spray with non-stick spray to get out easily for slicing.
Mix brown sugar and cinnamon together in a bowl. Set aside.
In another medium-sized bowl, beat white sugar and butter
together using an electric mixer until smooth and creamy.
Beat in eggs, 1 at a time, until blended in; add in vanilla extract.
Combine & whisk flour and baking powder together in another bowl and
add into creamed butter mixture and stir until blended.
Mix milk into batter until smooth.
Pour half the batter into the prepared loaf pan; add half the apples
and half the brown sugar/cinnamon mixture.
Lightly pat apple mixture into batter.
Pour the remaining batter over apple layer and top
with remaining apples and brown sugar/cinnamon mixture.
Lightly pat apples into batter; swirl brown sugar mixture through apples using knife or spoon.
Bake in the preheated oven until a toothpick inserted in the center of the loaf comes out clean,
approximately 50-60 minutes.
To make glaze, mix powdered sugar and milk or cream together until well mixed.
Let cool for about 15 minutes before drizzling with glaze.

1 egg
1/2 c. milk
1/2 c. sugar
3/4 c blueberries, or a little more
1/4 c. veg. oil
1 1/2 c. self rising flour
1 tsp. vanilla

Heat oven to 400.

Line muffin tin with paper liners or spray very well.
Beat egg, milk and oil together. Add flour, sugar and vanilla.
Mix until moistened. Add blueberries and gently fold in.
Fill each cup about half full and bake 20-25 minutes or till golden brown.
Immediately remove from pan.

These are not very sweet so you can sprinkle sugar on top if you want.

Banana Bread- No Oil, No Sugar

Banana Bread- No oil

You’ve GOT to try this banana bread recipe!
It uses honey and applesauce instead of sugar and oil.

Ingredients

2 cups whole wheat flour
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup unsweetened applesauce
3/4 cup honey
2 eggs, beaten
3 mashed overripe bananas

Directions

Preheat oven to 350 degrees F (175 degrees C).
Lightly grease a 9×5 inch loaf pan.
In a large bowl, combine flour, baking soda and salt.
In a separate bowl, mix together applesauce and honey.
Stir in eggs and mashed bananas until well blended.
Stir banana mixture into flour mixture; stir just to moisten.
Pour batter into prepared loaf pan.

Banana Muffins – NO FLOUR, OIL, BUTTER!!

 

Ingredients
2.5 cups old fashioned oats
1 cup plain low fat greek yogurt
2 eggs
… 3/4 cup sugar {or sweetener of choice – Stevia is best or splenda}
1.5 tsp baking powder
1/2 tsp baking soda
2 ripe bananas

 

Let the Baking Begin!
1. Preheat oven to 400 degrees. Spray tin with non-stick cooking spray or line 12 muffin tins with silicone or foil liners.
2. Place all of the ingredients, including bananas in a blender or food processor, and blend until oats are smooth. {I added the oats a cup at a time and blended in between}
3. Divide batter among cupcake liners, and bake for 15-20 minutes, or until toothpick comes out clean.
**Be sure to watch them closely in the oven, because depending on altitude, baking time may be a little less**
4. Most importantly: Enjoy & try not to eat them all at once!!!

Ham and Swiss Quiche

1 unbaked 9-inch (4-cup volume) deep-dish pie shell
1 cup (4 oz.) shredded Swiss cheese, divided
1 cup finely chopped, cooked ham
2 green onions, sliced
1 can (12 fl. oz.) NESTLÉ® CARNATION® Evaporated Milk
3 large eggs
1/4 cup all-purpose flour
1/4 teaspoon salt
1/8 teaspoon ground black pepper

PREHEAT oven to 350 degrees. Sprinkle 1/2 cup cheese, ham and green onions into pie shell. Whisk together evaporated milk, eggs, flour, salt and black pepper in large bowl. Pour mixture into pie shell; sprinkle with remaining cheese.

BAKE for 45 to 50 minutes or until knife inserted near center comes out clean. Cool on wire rack for 10 minutes before serving.

FOR MINI-QUICHE APPETIZERS, use 1 1/2 packages (3 crusts) refrigerated pie crusts. Grease miniature muffin pans. Unfold crust on lightly floured surface. Cut fourteen 2 1/2-inch circles from each crust. Press 1 circle of dough into bottom and up sides of each cup. Repeat with remaining crusts. Combine cheese, ham, green onions, 2/3 cup (5 fl.-oz. can) NESTLÉ® CARNATION® Evaporated Milk, 2 eggs (lightly beaten), 2 tablespoons flour, salt and black pepper in large bowl; mix well. Spoon mixture into crusts, filling 3/4 full. Bake in preheated 350° F. oven for 20 to 25 minutes or until crusts are golden brown. Cool slightly; lift quiche from cup with tip of knife. Serve warm or cool and freeze for later entertaining. Makes 3 1/2 dozen.
