Grain Free Pumpkin Nut Bread

Grain Free Pumpkin Nut Bread

Ingredients

1 cup homemade pumpkin puree
4 eggs
1/3 cup Vermont maple syrup
¼ cup MELT Organic spread
½ tsp salt
2 tsp cinnamon
2 tsp pumpkin pie spice
¼ cup tapioca flour
½ cup coconut flour
½ tsp baking soda
½ tsp baking powder
¾ cup chopped nuts of your choice

Instructions

Preheat the oven to 350F.
Line a small loaf pan with parchment paper.
Mix the pumpkin, eggs, maple syrup & MELT Organic.
Sift in the salt, spices, flours, baking soda and baking powder.
Mix thoroughly.
Add the nuts and mix.
Pour the batter into the pan and bake for 45-50 minutes or until it tests done in the center.

Carrot Zucchini Bread

INGREDIENTS
3 eggs
2 cups sugar
1 cup oil
3 cups flour
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon baking powder
2 teaspoons vanilla
2 cups zucchini, grated
1 1/4 cups carrots, grated
1 teaspoon cinnamon
1 cup walnuts, chopped (optional)

DIRECTIONS

Place cleaned carrots in food processor and pulse until nicely shredded or chopped
repeat with zucchini
Beat together the eggs, sugar, and oil.
Add the all the other ingredients and beat well.
Pour into 2 greased and floured 9 x 5 loaf pans and bake at 350 degrees for about 1 hour.

Banana Spice Cake

Banana Spice Cake

Ingredients:

4 ounces butter, softened
3/4 cup light brown sugar, firmly packed
1 large egg
2 to 3 bananas, mashed, about 3/4 cup
1/4 cup buttermilk or sour milk
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 scant teaspoon ground cinnamon
1/8 teaspoon ground cloves
1/8 teaspoon ground nutmeg

Preparation:

Heat oven to 350°. Grease and flour an 8- or 9-inch square pan.
In a large mixing bowl with electric mixer, cream butter and brown sugar.
Beat in egg, milk, vanilla, and mashed banana until blended.
Combine remaining dry ingredients and spices.
Stir the dry ingredients into the first mixture until moistened.
Spread in prepared pan.

Bake for 25 to 30 minutes, or until cake springs back when lightly touched with finger.
Frost with a cream cheese frosting or sprinkle with powdered sugar.

Bacon Egg Cheese Wreath

Bacon Egg Cheese Wreath

Ingredients

4 slices bacon, cut in half crosswise
1 can (8 oz) refrigerated crescent dinner rolls
5 large eggs
1 cup shredded Mozzarella cheese ( You can use Cheddar as well)
Salt and pepper, if desired
caraway seed
1 tablespoon Olive oil

Instructions

Heat oven to 375°F
Line large cookie sheet with cooking parchment paper.
In large skillet, cook bacon over medium heat about 4 minutes or until cooked but not crisp, turning once.
(It will continue to cook in oven.)
Set bacon aside;
Scramble your eggs in skillet. Salt and pepper, to taste.
Unroll dough; separate into 8 triangles.
On parchment-lined cookie sheet, arrange triangles in a star formation
(the longer sides of each crescent on the inside with the pointed ends pointing out.)
Place bacon on each of the triangles.
Sprinkle 1/3 cup of the cheese onto widest part of dough.
Carefully spoon eggs over cheese.
Sprinkle remaining cheese.
Pull points of triangles over eggs and cheese, and tuck under dough to form ring (filling will be visible).
Carefully brush dough with 1 tablespoon Olive oil;
Sprinkle some caraway seed

Place in oven and bake for 17-20 minutes, or until golden brown. Cool 2 minutes.
With broad spatula, carefully loosen ring from cookie sheet; slide onto serving platter.
Slice in between each crescent to make 8 individual pieces.

Faux Wendy’s Frosty or Skinny Shake

Skinny Shake or Wendys FrostyHave you tried the Skinny Shake before, it tastes like a Wendy’s frosty:

3/4 cup Almond Milk
about 15 ice cubes
1/2 tsp Vanilla
1-2 Tbsp unsweetened Cocoa powder…
1/3 of a Banana

Blend.

Ingredients:

3/4 C. Butter, softened
8 oz. pkg. cream cheese, softened
2 C .Sugar
2 large eggs
3 C. all-purpose flour
1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 1/2 C. mashed bananas (about 4 bananas)
1 C. Chopped Nuts
1/2 tsp. Vanilla

Directions:

Beat butter and cream cheese until creamy.
Gradually add sugar, beating until light and fluffy.
Add eggs, one at a time. Combine flour and next three ingredients.
Gradually add to butter mixture; beating on low just until blended.
Stir in bananas, nuts and vanilla. Spoon batter into 2 greased loaf pans.

Bake at 350 degrees for about 1 hour or until a wooden pick inserted in center comes out clean.
Cool before slicing, if possible! Enjoy!

INGREDIENTS …

3 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
3 teaspoons cinnamon
2 cups sugar
15 ounces frozen unsweetened strawberries, cut up
4 eggs, well-beaten
1 1/4 cups cooking oil
1 1/4 cups chopped walnuts or 1 1/4 cups pecans

DIRECTIONS

Preheat oven to 350 degrees F.
Grease and flour two 8″X4″X3″ loaf pans.
Combine dry ingredients.
Make a well in the centre.
Put strawberries (thawed), eggs, oil and nuts in the well.
Mix thoroughly into a nice batter.
Pour into two loaf pans.
Bake 1 hour at 350 degrees F or until a toothpick inserted in center comes out clean.
Cool in pans 5-10 minutes, then remove from pans and cool on racks.Makes 2 loaves.

INGREDIENTS

Makes 2 loaves
2 cups canned pumpkin
3 cups sugar
1 cup water
1 cup vegetable oil
4 eggs
3 1/3 cups all-purpose flour
2 teaspoons baking soda
2 teaspoons cinnamon
1 teaspoon salt
1 teaspoon baking powder
1/2 teaspoon nutmeg
3/4 teaspoon ground cloves

Preheat Oven to 350.
in a large mixing bowl, combine pumpkin, sugar, water, vegetable oil and eggs.
Beat until well mixed.

Measure the flour, baking soda, cinnamon, salt, baking powder, nutmeg and cloves into a separate bowl
and stir until combined.
Slowly add the dry ingredients to the pumpkin mixture, beating until smooth.
Grease two 9 x 5 inch loaf pans and dust with flour.
Evenly divide the batter between the two pans.

Bake for 60-70 minutes or until a toothpick inserted in center comes out clean.
Cool for 10-15 minutes, then remove from pans by inverting onto a rack and tapping the bottoms.

Slice and serve plain, buttered, or with cream cheese.
