Salmon Patties


Makes 5 to 6 patties


1 egg
1/4 cup milk
1/8 cup grated onion
1/8 cup grated zucchini
1/4 cup grated Parmesan cheese
1 Tbsp. Mayonnaise
1 tsp. Dijon mustard
1/4 tsp. garlic powder
1/4 tsp. paprika
1 tsp. lemon juice
1/8 tsp. black pepper
1/8 tsp. salt
14.5 ounce canned salmon, drained
1/2 cup bread crumbs, set aside 1/4 cup
2 Tbsp. olive oil


In a large bowl mix the egg and milk together. Add all the rest of
the ingredients to the egg mixture except for the salmon and

bread crumbs. Mix together well. Divide into 5 or 6 balls, and roll each

Add the patties, and cook 3 to 4 minutes on each side. Or until
