Strawberry or Any Fruit Cheesecake Chimichangas

Strawberry ChimichangasIngredients

1 (8-oz.) package cream cheese, at room temperature
1/4 cup sour cream
1 Tablespoon plus 1/4 cup sugar, divided
1 teaspoon vanilla extract
1/2 teaspoon fresh lemon zest
6 (8-inch) soft flour tortillas
1 3/4 cups sliced strawberries, divided (or any other fruit you’d like)
1 Tablespoon cinnamon
Vegetable oil, for frying

Directions

In the bowl (or a stand mixer fitted with the paddle attachment)
beat the cream cheese with the sour cream, 1 tablespoon sugar, vanilla extract and lemon zest,
scraping down the sides of the bowl as needed.
Fold in 3/4 cup of the sliced strawberries.

Divide the mixture evenly between the tortillas, slathering each portion in the lower third of each tortilla.

Next, fold the two sides of each tortilla toward the center and then roll the tortilla up like a burrito
and secure it with a toothpick. Repeat the rolling process with the remaining tortillas.

Combine the remaining 1/4 cup sugar with the cinnamon in a shallow bowl and set it aside.

Line a large plate with paper towels.

Add 3 inches of oil to a large, deep saucepan,
leaving a minimum of 2 inches from the top of the oil to the top of the saucepan.
Heat the oil over medium-high heat until it reaches 360ºF on a deep-fry thermometer.

Working in batches, fry the Chimichangas until golden brown and crispy, about 3 minutes, flipping them as needed.
Transfer the chimichangas to the paper towel-lined plate to drain for 1 minute,
and then roll them in the cinnamon and sugar mixture.

Repeat the frying and rolling process with the remaining chimichangas, returning the oil to 360ºF between batches.

INGREDIENTS

SERVINGS 6-8
1 1/2 lbs 80% lean ground beef
12 slices bacon, uncooked
1 -1 1/2 tablespoon grill seasoning (I use McCormicks Mesquite)
1 teaspoon garlic powder
1 tablespoon minced dried onion
1/4 cup Worcestershire sauce
salt and pepper

DIRECTIONS

Begin by chopping the raw bacon finely with a sharp knife. I slice it in half, then in strips, then dice it.
The key is to make it small.
I do not recommend a food processor because it heats the bacon up too much and can become gummy.

Gently mix all ingredients in a large bowl and add the bacon.
Form into 6-8 patties and put in the freezer for 30 minutes before grilling.
This is not a necessary step, but I think the meat holds together nicely when the patties go on cold.
Grill patties approximately 5 minutes on each side.
Allow them to rest 5 minutes before serving.
Top with cheese if you wish and any of your favorite toppings.

INGREDIENTS

SERVINGS 8
2 (10 ounce) packages frozen chopped broccoli, cooked and drained
1 cup mayonnaise
1 cup sharp cheddar cheese, grated
1 (10 3/4 ounce) can condensed cream of mushroom soup
2 eggs, light beaten
2 cups crackers, crushed
2 tablespoons butter, melted

DIRECTIONS

Preheat oven to 350°F
Spray a 13 x 9 inch baking dish with cooking spray.
In a large bowl, combine broccoli, mayonnaise, cheese, soup and eggs.
Mix well.
Place the mixture in pan.
Top with crushed crackers and pour the melted butter evenly over crackers.
Bake for 35 minutes or until set and browned.

3/4 cup Almond Milk
about 15 ice cubes
1/2 tsp Vanilla
1-2 Tbsp unsweetened Cocoa powder…
1/3 of a Banana

Ingredients:

3/4 C. Butter, softened
8 oz. pkg. cream cheese, softened
2 C .Sugar
2 large eggs
3 C. all-purpose flour
1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 1/2 C. mashed bananas (about 4 bananas)
1 C. Chopped Nuts
1/2 tsp. Vanilla

Directions:

Beat butter and cream cheese until creamy.
Gradually add sugar, beating until light and fluffy.
Add eggs, one at a time. Combine flour and next three ingredients.
Gradually add to butter mixture; beating on low just until blended.
Stir in bananas, nuts and vanilla. Spoon batter into 2 greased loaf pans.

Bake at 350 degrees for about 1 hour or until a wooden pick inserted in center comes out clean.
Cool before slicing, if possible! Enjoy!

Yields 24 Cupcakes with Frosting

Ingredients

Cupcakes:

1/4 Cup Butter, Softened
3/4 Cup Unsweetened Applesauce
1 Cup Granulated Sugar
3/4 Cup Brown Sugar, Packed Firmly
2 Large Eggs
3/4 Cup Fat Free Milk
1 Tablespoon Lemon Juice
1 (15 Ounce) Can Pumpkin Puree
2 1/3 Cups All Purpose Flour
1 Tablespoon Pumpkin Pie Spice
1 Teaspoon Ground Cinnamon
1 Teaspoon Baking Powder
3/4 Teaspoon Salt
1/2 Teaspoon Baking Soda
1/2 Teaspoon Ground Ginger

Frosting:

1 (8 Ounce) Package Reduced Fat Cream Cheese (Not Fat Free!)
1/4 Cup Butter, Softened
4 Cups Confectioners Sugar
1 Teaspoon Vanilla Extract
2 Teaspoon Ground Cinnamon
Preheat oven to 350 degrees.

In a large mixing bowl, add in butter, applesauce, sugars, and eggs and beat over medium speed until combined.
Add in pumpkin and continuing beating until thoroughly incorporated.
In a liquid measuring cup, combine milk and lemon juice and set aside.

In a medium bowl, combine remaining dry ingredients.
Slowly, over medium speed, add the dry ingredients to the pumpkin mixture,
alternating with the milk mixture, beating well after each addition.
Line cupcakes trays with paper liners and then spray lightly with a non-stick cooking spray.
Fill cupcake liners 3/4 of the way full and bake for 22 minutes or until a skewer inserted into the middle comes out clean. Remove from oven and allow to cool.

To make frosting, combine all ingredients in a medium mixing bowl and
beat over medium speed until ingredients begin to combine, slowly increase speed and
continue beating until a frosting is formed.

Once cupcakes cool completely, frost as desired and enjoy!
