Long John Silver’s Fish Batter

Long John's Fish Batter

LONG JOHN SILVER’S FISH BATTER

Ingredients:

3/4 cup flour
2 tablespoons cornstarch
1/4 teaspoon baking soda soda
1/4 teaspoon baking powder
1/4 teaspoon salt
3/4 cup water

Directions:
1. Sift dry ingredients

2. Add water and mix well

3. Use to coat fish or chicken filets

4. Cover the fish or chicken completely

5. Deep fry until a deep golden brown

Remove seeds from pumpkin and separate from pumpkin guts….
Rinse seeds well in cold water….
Sprinkle seasoned salt to taste….
Heat frying pan to medium heat…
Add seeds to pan (no oil or butter required)…
Stir seeds constantly to prevent from burning…
Heat until seeds are a nice golden brown and start to open…

(Warning! Seeds could spontaneously pop open with the intensity of a pop corn kernel popping…. Be prepared! I screamed!)

Season with additional seasoning salt if desired…

Skillet Chicken Fajitas

Skillet Chicken Fajitas

Ingredients:

4 Tbsp. Olive Oil, divided
3 Tbsp. Lemon Juice
4 Tbsp. Fajita Seasoning
3 Tbsp. Liquid Smoke
1 1/2 Lb. Boneless, Skinless Chicken Breasts
1 medium Onion
1/2 Green Bell Pepper, sliced
1/2 Red Bell Pepper, sliced
1/2 Yellow Bell Pepper, sliced
9 (8-inch) Whole Wheat Low Carb Tortillas
1 Lime, zest
Sour Cream, optional topping (or plain greek yogurt)
Salsa, optional topping
Cheddar Cheese, optional topping
Guacamole, optional topping

Directions:

1. In a large zip lock bag, combine 2 tbsp. olive oil, lemon juice, fajita seasoning, liquid smoke, and chicken breasts.
Seal and toss in the bag to coat chicken. Marinate in refrigerator for a minimum of 30 minutes.
2. Preheat oven to 350 degrees F.
3. Remove chicken from the marinade and place in a skillet over medium-high heat. Cook chicken until cooked through.
4. In the meantime, wrap tortillas in foil and warm them in the oven for approximately 10-15 minutes.
5. Remove chicken from skillet and slice into strips. (Skillet will be reused). Set chicken aside.
6. Add remaining olive oil into the skillet. Fry the onions and bell peppers until crisp and tender.
7. Add sliced chicken to the onions and bell peppers. Zest 1/2 of the lime on top. Serve hot with toppings.

Makes 9 Servings.

No Bake Cherry Cheesecake

No Bake Cheesecake

Fast and Easy No Bake Cherry Cheese Cake

So yummy!!!!!

1 prebaked pie shell, I like graham crust

For bottom cream cheese layer..

1 8oz block cream cheese, room temperature
3/4 cup icing sugar
1 1/2 tsp vanilla
3/4 cup cool whip, or sweetened whipped cream
Mix well, and spread on the bottom of pie shell

top with…

1 package instant vanilla pudding mixed with 1 1/2 cups milk.
Spread 1 cup cool whip or sweetened whipped cream on vanilla layer.
top with canned cherries or any other fruit filling.

Let refrigerate an hour before serving.
Enjoy!!!

Orange Kool Ade No Bake Cheesecake

ORANGE KOOL-ADE No Bake CHEESECAKE!!

Dreamy… Creamy…. Tastes like an Orange 50/50 ice cream bar!!!!!

Ingredients:

1 graham cracker pie crust (homemade tastes best…store bought is still ok)
2 packages unsweetened Kool-Aid Orange powdered drink mix
1 8oz softened cream cheese
1 14oz can sweetened condensed milk
1 8oz container Cool Whip

Directions:

1. In a large bowl combine cream cheese and Kool-Aid
Add sweetened condensed milk (I used a hand mixer to make it nice and smooth)
2. Fold in Cool Whip
3. Stir with spoon until mixture is well mix ….. the mixture will be thick and you will have to spoon out into the crust.
4. Smooth out top of pie with back side of spoon.
5. Place in refrigerator for 1-2 hours and serve chilled

* Pie can be made in advance and frozen. Place pie in zip-lock freezer bag ….make several in different flavors.
